Directions

  1. Core and seed the tomatoes, then chop them into small, uniform pieces.
  2. Finely chop the purple onion and mince the garlic cloves.
  3. If using, seed and chop the green pepper and jalapeño peppers.
  4. In a large mixing bowl, combine the chopped tomatoes, onion, garlic, green pepper, and jalapeños.
  5. Add the can of Rotel Chile & Tomatoes, including the juice.
  6. Pour in the olive oil and balsamic vinegar.
  7. Stir in the chopped cilantro if desired.
  8. Mix all ingredients thoroughly until well combined.
  9. Transfer the salsa to a glass jar or airtight container.
  10. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
