Description

Indulge in these decadent chocolate balls, featuring a dense, buttery chocolate shell encasing a juicy, brandy-soaked candied cherry. The contrast between the rich, sweet chocolate and the tart, boozy fruit creates a sophisticated flavor profile perfect for holiday gatherings or special desserts. These no-bake treats are surprisingly easy to assemble, requiring only melting, chilling, and rolling. They store beautifully in the refrigerator, making them ideal for make-ahead parties. Serve them elegantly on a platter for an impressive yet simple dessert that feels luxurious and homemade.

Ingredients

Directions

  1. Soak the candied cherries in the cherry brandy overnight or for at least 4 hours to infuse the fruit with flavor.
  2. Drain the cherries, reserving the brandy for later use in the chocolate mixture.
  3. In a large bowl, cream the softened butter and powdered sugar together until smooth and light.
  4. In a double boiler, melt the sweet milk chocolate and unsweetened baking chocolate together, stirring until smooth.
  5. Gradually add the melted chocolate to the butter and sugar mixture, mixing thoroughly by hand or mixer until fully incorporated.
  6. Stir in the reserved cherry brandy until it is completely absorbed by the chocolate mixture.
  7. Add 3 tablespoons of unsweetened cocoa powder to the mixture and mix until uniform and dark.
  8. Cover the chocolate mixture and place it in the freezer for about 30 minutes, or until it is stiff enough to handle.
  9. Prepare a rolling surface by mixing equal parts powdered sugar and unsweetened cocoa powder (about 1/3 cup of each) and dusting a piece of waxed paper heavily with this mixture.
  10. Remove the chilled chocolate mixture from the freezer.
  11. Spoon a heaping teaspoon of the chocolate mixture onto the dusted waxed paper and flatten it into a small disc using your fingers, which you should dip into the cocoa/sugar mix to prevent sticking.
  12. Place one drained cherry in the center of the chocolate disc and fold the chocolate up and around the cherry to encase it completely.
  13. Gently roll the ball between your palms to smooth the surface and form a perfect sphere.
  14. Roll the finished ball in the remaining cocoa and powdered sugar mixture to coat.
  15. Repeat the process for all cherries, returning the chocolate mixture to the freezer if it becomes too soft to handle.
  16. Place the completed chocolate balls in an airtight container and store in the refrigerator until ready to serve.
