  1. Wash the chicken thoroughly inside and out, then pat completely dry with paper towels.
  2. Place the chicken in a large pot or kettle. Add the 3 scallion pieces and 3 ginger slices.
  3. Cover the chicken with cold water or broth until it is about 3/4 submerged.
  4. Bring the liquid to a gentle simmer over medium heat.
  5. Skim off any foam or scum that rises to the surface to keep the broth clear.
  6. Reduce heat to low, cover the pot, and let the chicken simmer for 20 minutes.
  7. Turn off the heat and let the chicken steep in the hot liquid for 1 hour.
  8. Carefully remove the chicken from the pot and let it cool slightly.
  9. Disjoint the chicken into serving pieces and arrange them on a platter.
  10. Reserve 1 cup of the poaching liquid for the sauce; save the rest for another use.
  11. In a small saucepan, bring the reserved 1 cup of liquid to a boil and reduce by half.

  13. Mix the cornstarch with 4 teaspoons of water in a small bowl to create a slurry.
