  1. Cover beans with cold water, bring to a boil for 1-2 minutes, then turn off heat and let soak for 1 1/2 hours.
  2. Drain beans thoroughly.
  3. Heat vegetable oil in a large heavy Dutch oven over medium heat.
  4. Add chopped onions and saut for 5 minutes until softened.
  5. Add diced green chilies, minced garlic, oregano, cumin, and chili powder.
  6. Saut for 5 minutes until fragrant.
  7. Add drained beans, chicken broth, chopped tomatillos, and 1 cup chopped fresh cilantro.
  8. Add boneless skinless turkey breast halves (cut crosswise in half).
  9. Simmer until turkey is just cooked through, about 20 minutes.
  10. Transfer turkey to a plate, cover with foil, and refrigerate.
  11. Continue simmering chili uncovered until beans are tender, about 2 1/2 hours.
  12. Cut cooled turkey into 1/2 inch pieces.
  13. Add turkey pieces, 1 cup chopped green onions, and 2 tablespoons fresh lime juice to the chili.
  14. Stir well and heat through.
  15. Season with salt and pepper to taste.
  16. For cilantro cream: Combine 2/3 cup plain yogurt, 3 tablespoons chopped fresh parsley, and 3 tablespoons chopped fresh cilantro in a medium bowl.
  17. Ladle chili into bowls, top with a spoonful of cilantro cream, and sprinkle with fresh cilantro sprigs and grated cheddar cheese.
