  1. In a bowl with an electric mixer, blend walnuts, 3/4 of the butter, sugar, flour, zest and egg until combined well.
  2. Press the mixture into an 11 inch tart pan with a removable bottom.
  3. Freeze the tart shell for 15 minutes.
  4. While the shell is freezing, preheat the oven to 375F (191C).
  5. Bake the shell in the middle of the oven for 25-30 minutes, or until golden brown.
  6. Cool the baked shell on a rack.
  7. Remove the side of the pan and transfer the shell to a serving plate.
  8. Fill the shell with 2 1/2 cups of fresh raspberries.
  9. In a large metal bowl set over a saucepan of barely simmering water, melt the white chocolate.
  10. Remove the bowl from the heat and whisk in the warmed cream and the remaining butter until smooth.
  11. Spread the chocolate mixture over the raspberries, smoothing the top.
  12. Chill the tart, covered, for 3 hours or overnight.
  13. Garnish the tart with whipped cream and the remaining 1/2 cup of raspberries.
  14. Serve at room temperature.
