  4. Remove from heat and let cool for 15 minutes.
  5. Remove 12 whole apricots from the compote and set aside for garnish.
  6. Pour the remaining liquid and apricots into a food processor fitted with the metal blade.

  8. Transfer the purée to a small bowl, cover, and refrigerate until ready to use.
