Ingredients

Directions

  1. Preheat oven to 250ðF (120ðC). Grease and flour a 10 or 12-inch springform pan.
  2. Melt the semi-sweet chocolate and butter in a double boiler over simmering water. Stir until smooth.
  3. Remove from heat and let the chocolate mixture cool slightly for about 10 minutes.
  4. In a separate bowl, beat egg yolks with granulated sugar, vanilla extract, Grand Marnier, and lemon juice until thick and pale.
  5. Fold the cooled chocolate mixture into the egg yolk mixture until well combined.
  6. In a clean mixer bowl, beat egg whites until soft peaks form. Gradually add the remaining granulated sugar while beating until stiff peaks form.
  7. Gently fold one-third of the beaten egg whites into the chocolate mixture to lighten it.
  8. Carefully fold in the remaining egg whites until no white streaks remain, being careful not to deflate the batter.
  9. Pour the batter into the prepared springform pan and smooth the top.
  10. Bake for 2 to 2.5 hours. The cake is done when it still has a slight jiggle in the center but is set around the edges.
  11. Allow the cake to cool completely in the pan on a wire rack.
  12. Run a knife around the edge and release the springform clasp. Transfer to a serving plate.
  13. Dust generously with powdered sugar just before serving.
  14. Serve slices with freshly whipped cream and optional fresh berries.
