  1. Preheat the oven to 435F (225C).
  2. Roll the pork shoulder and tie it securely with kitchen twine to maintain its shape.
  3. In a large oven-safe skillet or Dutch oven, melt the butter over medium-high heat.
  4. Sear the tied pork on all sides until golden brown, about 3-4 minutes per side.
  5. Season the pork generously with salt, pepper, and the 4 smashed juniper berries.
  6. Place the skillet in the preheated oven and roast for 30 minutes, basting with pan juices halfway through.
  7. Meanwhile, in a separate pot, heat the Crisco over medium heat.
  8. Add the sauerkraut and saut briefly for 2-3 minutes to warm through.
  9. Stir in the bay leaves, 6 whole juniper berries, grated apples, and white wine.
  10. Reduce heat to medium-low and let the sauerkraut mixture simmer for 30 minutes.

  14. Reduce oven temperature to 340F (170C) and bake for an additional 35 minutes.
