  1. Sift flour, soda, and salt. Cream the butter and sugar. Add eggs and beat it. Add mashed bananas, orange rind, milk, and vanilla. Stir it. Add dry ingredients and mix. Add coconut, pecans and bake at 350 degrees for one hour and 10 minutes in a greased loaf pan. (Sinkin' Spells, Hot Flashes, Fits and Cravin's. 1988)
