Note
This recipe originally included oranges and cashews, which are not in the ingredient list. If you wish to add them, toss in peeled orange segments and coarsely broken cashews along with the bacon at the end.
For a stovetop version, cook the bacon in a skillet over medium heat until crisp. Drain most of the fat, leaving about 1 tablespoon. Add the vinegar, sugar, salt, pepper, and tarragon to the pan and heat until simmering. Proceed with adding vegetables and spinach as directed.
Fresh tarragon can be used in place of dried; use 1 teaspoon of finely chopped fresh tarragon if substituting.
