Ingredients

Directions

  1. In a 4-quart or larger electric slow cooker, combine the thinly sliced onion, minced garlic, and 3 tablespoons of the chopped parsley.
  2. Season the pork chops with fresh ground pepper and dust them lightly with all-purpose flour.
  3. Arrange the flour-dusted pork chops over the onion mixture in the slow cooker, overlapping them slightly if necessary.
  4. Pour the dry red wine or beef broth evenly over the pork chops.
  5. Cover the slow cooker and cook on the low setting for 7 to 8 hours, until the pork is very tender when pierced with a fork.
  6. About 10 minutes before the pork is finished cooking, spread the coarsely chopped walnuts in a shallow baking pan.
  7. Toast the walnuts in a 350&# 194;°F (175ðC) oven for 8 to 10 minutes, watching carefully to prevent burning. Set aside to cool.
  8. Carefully lift the pork chops from the slow cooker and place them on a warm serving platter. Keep warm.
  9. Skim any excess fat from the surface of the onion mixture in the cooker.
  10. Taste the onion sauce and season with salt to taste.
  11. Spoon the onion mixture over the pork chops on the platter.
  12. Sprinkle the toasted walnuts and the remaining 1 tablespoon of parsley over the chops before serving.

Note

If using beef broth instead of wine, add a splash of balsamic vinegar for acidity to balance the richness.

Ensure your slow cooker is large enough to hold the chops in a relatively even layer for best results.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently to maintain tenderness.
