Tomatoes 1 c Chopped parsley 1/2 c Diced celery 1/2 c Chopped green pepper 1/2 c Chopped red onion 1/4 c Chopped mint 1/4 c Lemon juice 1 tb Olive oil 1 ts Salt 1/4 ts Pepper 1/8 ts Each garlic powder & cumin Lettuce leaves Mint leaves (optional) 1. In large mixing bowl, combine all ingredients, except lettuce and mint leaves, mixing thoroughly. Chill. 2. Serve on a bed of lettuce. 3. Garnish with mint leaves if desired.
