Yorkshire pudding is a traditional British side dish that serves as the perfect companion to roast meats, particularly beef. Made from a simple batter of flour, eggs, and milk, it rises dramatically in the oven to create a golden, crisp crust with a tender, eggy center. The key to success lies in the hot fat and high oven temperature, which cause the batter to puff up instantly. Whether served as individual portions in a muffin tin or as a large communal pudding in a roasting pan, this dish adds a comforting, savory element to any meal. It is versatile enough to be enjoyed on its own or used to soak up delicious meat juices and gravy.

Directions

  1. Preheat the oven to 425&# 194;°F (220ðC) or Gas Mark 7-8.
  2. Sift the plain flour and salt into a mixing bowl.
  3. Make a well in the center of the flour and crack the egg into it.
  4. Gradually whisk in the milk, starting from the center and incorporating the flour until a smooth, lump-free batter is formed.
  5. Let the batter rest for a few minutes if possible.
  6. Place the lard or beef dripping into a shallow roasting tin or four small individual tins.
  7. Heat the fat in the preheated oven until it is smoking hot and hazes.
  8. Carefully remove the hot tin from the oven and immediately pour the batter into the tin.
  9. Return to the oven and bake for 20-30 minutes until the puddings are golden brown and well-risen. Do not open the oven door during cooking.
