Ingredients

Directions

  1. In a small bowl, mix together the ground pepper, MSG (if using), and soy sauce. Set aside.
  2. Heat a wok or large frying pan over medium-high heat until hot and dry.
  3. Add half of the vegetable oil to the pan. Once heated, pour in the beaten eggs and scramble lightly until just set but still soft. Remove eggs from the pan and set aside.
  4. Increase heat to high and add the remaining vegetable oil to the pan.
  5. Add the diced pork, shrimp, and chicken to the pan. Stir-fry for 1-2 minutes to heat through.
  6. Add the bean sprouts and chopped scallions to the pan. Stir-fry for another minute until slightly tender but still crisp.
  7. Add the hot cooked rice to the pan. Toss thoroughly to combine with the meat and vegetables.
  8. Pour the soy sauce mixture over the rice. Stir-fry continuously, breaking up any clumps of rice, until the rice is evenly coated and heated through.
  9. Return the scrambled eggs to the pan. Gently fold them into the rice mixture.
  10. Turn off the heat. Add the shredded lettuce to the pan and toss quickly to wilt slightly from the residual heat.
  11. Serve immediately while hot.
