Description

These warm, savory mushroom sandwiches are the ultimate cozy appetizer. Earthy button mushrooms and sweet onions are sautéed in butter until tender and flavorful, creating a rich base that sits atop sturdy slices of rye or pumpernickel bread. A generous layer of sharp Swiss and Italian cheeses melts into a gooey, golden blanket under the broiler, while a sprinkle of breadcrumbs adds a delightful crunch. The combination of the hearty bread, savory filling, and gooey cheese creates a perfect balance of textures and flavors. Ideal for game day gatherings, holiday parties, or a quick, satisfying snack when you crave something warm and comforting.

Directions

  1. Chop fresh mushrooms and onions finely.
  2. Sauté the mushrooms and onions in butter, margarine, or oil over medium heat until the onions are translucent and the mushrooms have released their moisture.
  3. Drain any excess liquid from the pan and set the mushroom mixture aside to cool.
  4. Take slices of cocktail bread, preferably rye or pumpernickel, and pile a generous mound of the cooled mushroom and onion mixture onto each slice.
  5. Top the mushrooms with grated Swiss cheese, grated Italian cheese (such as Locatella), and a sprinkle of breadcrumbs.
  6. Broil in the oven until the Swiss cheese is fully melted and bubbly.
  7. Serve immediately while hot and crispy.

Note

For best results, use thick-cut bread to prevent sogginess from the mushroom moisture.

You can substitute Swiss cheese with Gruyère or Provolone for a different flavor profile.

Add a pinch of thyme or rosemary to the sautéed mushrooms for extra aroma.
