Ingredients

Directions

  1. Preheat your oven to 400°F (200°C) or prepare a grill for medium-high heat.
  2. Cut the loaf of bread into thick slices, approximately 1.5 to 2 inches thick.
  3. Halve the garlic cloves lengthwise. Vigorously rub the cut side of the garlic over each bread slice to coat them with garlic flavor.
  4. Brush the garlic-rubbed slices liberally with extra virgin olive oil on both sides.
  5. Toast the bread slices in the oven or on the grill for 5-7 minutes, turning once, until they are golden brown and crisp on the outside but still slightly soft inside.
  6. Remove the toasted bread from the heat. While still warm, top each slice with sliced tomatoes, a sprinkle of fresh basil, and grated Parmesan or Romano cheese.
  7. Drizzle with balsamic vinegar and a final touch of olive oil. Season with salt and pepper to taste.
  8. Serve immediately while the bread is warm and crisp.

Note

For a spicier kick, use roasted red pepper oil or add a dash of red pepper flakes to the olive oil before brushing.

You can make infused garlic oil by heating oil with garlic cloves until fragrant, then straining. Store in a dark place and use within a week for safety.

Other excellent toppings include roasted eggplant, caramelized onions, or a spread of ricotta and honey.

Serve bruschetta immediately after assembling to prevent the bread from becoming soggy.
