  1. Clean the mushrooms in cold water and remove the stems. Slice the caps into 3/16 inch slices.
  2. Finely chop the shallots.
  3. Heat a frying or sauté pan over medium-high heat. Add the butter and let it melt.
  4. When the butter is bubbling, add the sliced mushrooms. Sauté, tossing or stirring occasionally, until the mushrooms start to brown. If a lot of juice comes out, let it boil away to concentrate the flavor.
  5. As the mushrooms start to brown, add the chopped shallots and half of the chopped parsley. Continue cooking until the mushrooms are fully browned and tender.
  6. Taste the mixture. Add the lemon juice if it enhances the flavor, though it is optional.
  7. Toast slices of bread and butter them while warm.
  8. Spoon the sautéed mushroom mixture over the warm, buttered toast.
  9. Garnish with the remaining fresh chopped parsley or finely chopped fresh chives.

Note

If you don't have shallots, you can substitute them with 3 tablespoons of chopped onion and 1 small clove of minced garlic.

Save the mushroom stems for making mushroom stock or soup later.

For a fancier presentation, cut the crusts off the bread before toasting, cut the toast diagonally into triangles, and serve as "toast points."
