  1. Preheat the oven to 400 degrees F for Apple Crunch Muffins and 375 degrees F for Apple Cheddar Muffins.
  2. For Apple Crunch Muffins: Cream the shortening and sugar together in a large bowl. Beat in eggs one at a time, mixing well after each addition.
  3. In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
  4. Gradually stir the flour mixture into the shortening mixture. Add oats, cheddar (if making savory version, otherwise omit), and pecans, mixing well after each addition.
  5. Gradually add the milk, stirring until all ingredients are just moistened. Fold in finely chopped apples.
  6. Grease muffin pans and fill each cup 2/3rds full of batter.
  7. Dip apple slices in melted butter and then into the cinnamon-sugar mixture. Press one apple slice into the top of each muffin.
  8. Bake for 25 minutes in the preheated oven, or until golden brown.
  9. For Apple Cheddar Muffins: Cut in shortening with a pastry blender into flour, sugar, baking powder, salt, and cinnamon until fine crumbs form.
  10. Combine egg and milk. Add to dry ingredients all at once, stirring just enough to moisten. Stir in chopped tart apples.
  11. Spoon batter into paper-lined 2 1/2-inch muffin-pan cups, filling 2/3rds full.
  12. For Nut Crunch Topping: Mix together brown sugar, chopped pecans, and cinnamon in a small bowl.
  13. Sprinkle nut crunch topping over the Cheddar Muffins.
  14. Bake Cheddar Muffins in 375 degree oven for 25 minutes or until golden brown.
  15. Serve hot with butter and homemade jelly or jam.

Apples should be washed and cored. Shred or slice unpeeled apples as specified for each variation.
