Description

These Chocolate Zucchini Cakes are the ultimate comfort dessert, combining the deep, comforting flavor of cocoa with the unexpected moisture and subtle sweetness of garden-fresh zucchini. The addition of grated orange peel provides a vibrant citrus aroma that cuts through the richness, creating a complex and sophisticated flavor profile. The texture is incredibly moist and tender, making every bite feel like a warm hug. This recipe is perfect for using up an abundance of summer zucchini or for satisfying a chocolate craving without feeling overly heavy. Ideal for afternoon tea, family gatherings, or as a show-stopping centerpiece for a casual dinner party. Serve warm from the oven or at room temperature for the best experience.

Ingredients

Directions

  1. Preheat your oven to 325°F (165°C). Grease and flour a 9x13 inch baking pan or two Bundt pans.
  2. In a medium bowl, sift together the flour, cocoa powder, baking soda, salt, cinnamon, and allspice. Set aside.
  3. In a large mixing bowl, cream together the softened butter, vegetable oil, and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and grated orange peel.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing just until combined.
  6. Fold in the grated zucchini and chocolate chips gently until evenly distributed.
  7. Pour the batter into the prepared pan(s). Smooth the top with a spatula.
  8. Bake for 45 to 50 minutes, or until a wooden toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before removing to a wire rack to cool completely.

Note

For best results, grate the zucchini yourself and squeeze out excess moisture with a clean kitchen towel to prevent a soggy cake.

You can substitute buttermilk with regular milk mixed with 1 tablespoon of lemon juice or vinegar.

This cake stores well covered at room temperature for up to 3 days, or in the refrigerator for up to a week.

For a richer flavor, substitute the vegetable oil with melted butter.
