Cassoulet Recipes
Description
Cassoulet is the ultimate comfort food, a rustic French stew that brings warmth to any table. This hearty dish features tender white beans simmered in a savory broth with smoky andouille sausage, rich duck confit, and pork skin. The magic happens during the final baking, where breadcrumbs and cheese melt into a crisp, golden crust that contrasts beautifully with the creamy interior. It’s a labor of love, best enjoyed on chilly evenings or during festive gatherings where you can savor the deep, complex flavors of slow cooking. Each bite offers a perfect balance of smoky meat, earthy beans, and aromatic herbs. Serve it with a simple green salad and a robust red wine to complete the experience. This traditional recipe captures the essence of southern France in every spoonful.Ingredients
Directions
-
Soak dried white beans overnight in cold water. Drain and rinse.
-
Cook beans in fresh water with a bay leaf and thyme until tender but firm, about 45 minutes. Drain, reserving some liquid.
-
Sauté sliced onions, garlic, and carrots in olive oil until softened.
-
Brown sausage slices and duck confit legs in a separate pan. Remove and set aside.
-
In a large casserole dish, layer half the beans, then the sausage, duck, and vegetables. Top with remaining beans.
-
Pour enough reserved bean cooking liquid to just cover the ingredients.
-
Season with salt, pepper, and herbs de Provence.
-
Cover and bake at 350°F (175°C) for 45 minutes.
-
Remove lid, sprinkle with bread crumbs and grated cheese. Return to oven uncovered for 15-20 minutes until crust is golden and bubbly.
-
Let rest for 10 minutes before serving.
Note
For a richer flavor, add a splash of dry white wine or brandy to the bean cooking liquid.
If you don't have duck confit, substitute with smoked chicken thighs or additional sausage.
Cassoulet tastes even better the next day as the flavors meld. Store leftovers in an airtight container in the refrigerator for up to 3 days.
Freeze cooled cassoulet in portions for up to 3 months. Thaw overnight in the fridge and reheat gently.
