  1. Melt butter over low heat in a medium-sized saucepan. Add golden syrup, bring to a boil, then remove from heat. Let stand for ten minutes.
  2. Sift together the flour, bicarbonate of soda, ginger, cardamom, cinnamon, cloves, and cocoa. Add these dry ingredients, milk, and finely chopped mixed peel to the syrup mixture. Stir with a wooden spoon until smooth.
  3. Cover the bowl and let the mixture stand at room temperature for 1 1/2 hours. The mixture will become thicker during this time.
  4. Turn the mixture onto a surface dusted with extra flour. Knead lightly, working in only enough flour until the mixture loses its stickiness.
  5. Roll out the dough to 8mm (about 1/2 inch) thickness. Cut out shapes using a heart-shaped or any other cutter, about 5cm (2 inches) in diameter. Place on lightly greased oven trays.
  6. Using the end of a wooden spoon, gently push an indentation into the center of each biscuit. Do not push all the way through. Fill each indentation with about 1/2 teaspoon of raspberry jam.
  7. Bake in a moderate oven (180°C/350°F) for 8 to 10 minutes or until golden. Leave on trays until completely cold.
  8. Melt chocolate in the top of a double boiler over simmering water. Spoon onto a saucer for easier handling. Dip the bases of the cooled biscuits into the chocolate, then smooth excess chocolate off with a knife.
  9. Place the biscuits jam-side down on foil-lined trays. Refrigerate until the chocolate is firm.

Note

These cookies store well in an airtight container for up to two weeks. They often taste better after a few days as the flavors meld.

If you cannot find golden syrup, you can substitute with light corn syrup or honey, though the flavor profile may vary slightly.

Ensure the biscuits are completely cool before dipping in chocolate to prevent the chocolate from seizing or the jam from leaking excessively.
