  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg yolk, grated orange peel, ground ginger, vanilla extract, and salt until well combined.
  4. Gradually stir in the flour until a soft, cohesive dough forms.
  5. Fill a cookie press with the dough.
  6. Press cookies into desired shapes directly onto ungreased cookie sheets.
  7. Bake for 10 minutes, or until set but still pale in color. Do not let them brown.
  8. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Note

Storage: Store in an airtight container at room temperature for up to one week.

Variation: For a stronger ginger flavor, add an additional 1/2 teaspoon of ground ginger.

Tip: If the dough is too soft to press, chill it in the refrigerator for 30 minutes before using the cookie press.
