  1. In a large bowl, combine the white cheese, softened butter, egg yolks, and a pinch of salt. Mix until smooth.
  2. Add the flour to the cheese mixture and knead gently until a soft, cohesive dough forms.
  3. Flatten each slice gently in the palm of your hand. Remove the pit from each apricot and place a small sugar lump or cube inside the cavity.
  4. Place one prepared apricot in the center of a dough slice. Carefully fold the dough around the fruit to form a ball, sealing the edges tightly to prevent bursting.
  5. Bring a large pot of slightly salted water to a gentle simmer. Carefully add the apricot balls and let them simmer for about 10 minutes, or until they float to the surface.
