Ingredients

Directions

  1. Preheat oven to 325°F (165°C).
  2. For the crust, mix the gingersnaps, hazelnuts, and 3 tablespoons of brown sugar in a bowl.
  3. Add the melted butter to the dry ingredients and mix until combined.
  4. Press the mixture firmly into the bottom and 2 inches up the sides of a 9-inch springform pan.
  5. For the filling, beat the cream cheese and 1 cup packed brown sugar with a mixer until fluffy and smooth.
  6. Beat in the pumpkin puree until well incorporated.
  7. Add the whipping cream, maple syrup, vanilla extract, cinnamon, and allspice. Beat until combined.
  8. Add the eggs one at a time, beating until just combined. Do not overmix.
  9. Pour the filling batter into the prepared crust.
  10. Bake for 1.5 hours, or until the center is set and the edges are slightly golden.
  11. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 30 minutes to prevent cracking.
  12. Remove from the oven and cool completely at room temperature.
  13. Refrigerate overnight before removing from the pan and serving.

Note

This cheesecake is very rich, so it is best served in small slices.

Ensure the cream cheese is at room temperature to avoid lumps in the batter.

Store leftovers covered in the refrigerator for up to 5 days.
