  1. Butter the springform pan with softened butter.
  2. Combine graham wafer crumbs, melted clarified butter, nutmeg, and sugar in a food processor or bowl and process until well-mixed.
  3. Press the mixture evenly over the bottom and two-thirds up the sides of the pan. Set aside.
  4. Preheat oven to 150°C / 300°F.
  5. Melt the 300g white chocolate in a double boiler. Slowly stir in the 125mL heavy cream until smooth. Remove from heat and let cool slightly.
  6. In a large bowl, with an electric mixer on medium speed, beat the cream cheese until smooth.
  7. Add egg yolks one at a time, making sure to blend well, stopping to scrape down sides of the bowl after each addition.
  8. Add the cooled white chocolate mixture, vanilla, and salt. Beat at medium speed for two minutes.
  9. Beat egg whites in a separate mixing bowl with an electric mixer on low speed until foamy. Beat on high until soft, rounded peaks form.
  10. Gently fold the egg whites into the chocolate mixture.
  11. Pour the filling into the prepared crust.
  12. Place the pan on a baking sheet and bake at 150°C for 55 minutes.
  13. The cake will rise and the top will wiggle slightly when shaken. Turn off the heat and let the cake stand in the turned-off oven for one hour (it may sink slightly).
  14. Remove cake from oven and place on a wire rack in a draft-free place to cool to room temperature.
  15. For the topping: Melt the remaining 180g white chocolate in a double boiler. Slowly stir in the 65mL heavy cream until the mixture is smooth.
  16. Stir in the crème de cacao (or vanilla/coconut extract if substituting).
  17. Pour the topping over the cooled cake.
  18. Cover with plastic wrap and refrigerate overnight.
  19. Three hours before serving, remove the cake from the refrigerator and remove the side of the springform pan.
  20. Garnish if desired and serve at room temperature.

Note

Storage: This cake may be tightly covered and refrigerated up to three days. It may also be frozen in the pan, tightly covered with plastic wrap and aluminum foil. To defrost, leave wrapped in the refrigerator overnight.

Substitutions: The crème de cacao may be substituted with pure vanilla extract or coconut extract for a different flavor profile.

Serving Tip: For the fullest flavor, this cake must be served at room temperature. Allow it to sit out for three hours before serving.

Garnishes: Optional garnishes include chopped nuts (almonds, pistachios, or pecans), fresh strawberries, dried apricots, white/dark/milk chocolate curls, vanilla wafers, or desiccated coconut.
