Description

This elegant Almond Ice Cream is a testament to the power of fresh ingredients. By pounding blanched almonds into a smooth paste, you unlock a deep, authentic nuttiness that extract simply cannot replicate. The rich custard base, made with egg yolks and heavy cream, provides a luxurious, velvety texture that coats the palate. A splash of kirsch adds a subtle fruity complexity that brightens the dense sweetness. This dessert is perfect for sophisticated dinner parties or a quiet evening indulgence. Serve it solo to appreciate its purity, or pair it with warm chocolate sauce for a classic contrast. It’s a timeless treat that feels both comforting and refined.

Ingredients

Directions

  1. Pound the blanched almonds in a mortar and pestle or food processor until they form a smooth paste.
  2. In a medium bowl, whisk together the egg yolks, sugar, and kirsch for about 5 minutes until the mixture is pale and slightly thickened.
  3. Combine the milk and heavy cream in a saucepan. Add the almond paste and stir thoroughly to incorporate.
  4. Heat the milk mixture over medium heat until it just begins to boil, then immediately remove from heat.
  5. Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly to temper the eggs and prevent curdling.
  6. Return the combined mixture to the saucepan and cook over low heat, stirring continuously with a wooden spoon. Heat for about 5 minutes, ensuring it does not boil, until the custard thickens slightly and coats the back of the spoon.
  7. Remove from heat and allow the custard to cool completely. Strain through a fine-mesh sieve to remove any almond bits for a smoother texture.
  8. Pour the cooled custard into an ice cream maker and freeze according to manufacturer's instructions until thoroughly firm.

Note

You can substitute the fresh almond paste with instant almond paste or almond extract. If using extract, start with 1-2 teaspoons and adjust to taste. Be careful with pre-made pastes as they may already contain sugar.

For added texture and flavor, fold in chopped fruits like cherries or nuts like walnuts just before freezing.

Store the finished ice cream in an airtight container in the freezer for up to one month.
