  1. Combine the grated fresh coconut and water in a medium saucepan. Bring to a gentle simmer over medium heat and cook for 20 minutes, stirring occasionally to prevent sticking, allowing the coconut flavors to infuse into the water.
  2. Add the sugar to the mixture and continue to simmer for an additional 5 minutes, stirring until the sugar is completely dissolved.
  3. Remove the saucepan from the heat and allow the mixture to cool to room temperature. This may take 30-45 minutes.
  4. Strain the cooled mixture through a fine-mesh sieve into a clean bowl, pressing on the solids to extract as much liquid as possible. Discard the leftover coconut pulp.
  5. Stir the gin into the strained coconut syrup until well combined.

Note

For best results, ensure the mixture is completely cool before churning to prevent ice crystals from forming too quickly.

If you do not have an ice cream maker, you can freeze the mixture in a shallow container in the freezer, stirring vigorously every 30 minutes with a fork to break up ice crystals for about 4 hours.

Store any leftovers in an airtight container in the freezer for up to one month. Let sit at room temperature for 5-10 minutes before scooping for easier serving.
