Directions
-
Wash the wheat grain thoroughly and leave to soak in cold water for 6 hours.
-
Drain the wheat, then pour 2 liters of boiling water over it. Cover and cook over low heat for 3 hours until the grains are soft but not mushy. Strain and allow to cool completely.
-
Wash the poppy seeds thoroughly in cold water. Scald with boiling water and drain. Pour fresh boiling water over them, bring to a boil, then remove from heat and let stand in a warm place for 3 hours. Drain and mince or grind the seeds until creamy.
-
Soak the currants in the rum or cognac. Cut the figs and dates into thin strips.
-
Crush the vanilla pod in a mortar to release the seeds.
-
In a mixing bowl, combine the ground poppy seeds, cream, honey, vanilla, and lemon peel. Grind or mix for 15 minutes until smooth and well combined.
-
Add the cooled wheat, crushed walnuts, chopped almonds, soaked currants, fig strips, and date strips to the poppy seed mixture.
-
Mix everything well and transfer to a serving bowl. Decorate with whole almonds and chill before serving.
Note
Preparation time is approximately 6 hours due to soaking, plus active cooking time.
Ensure wheat is cooked until tender but retains some chew; it should not be mushy.
Poppy seeds can be ground in a food processor or mortar and pestle for a finer texture.
For a non-alcoholic version, substitute rum with additional honey or fruit juice for soaking currants.
Can be served warm or chilled; flavor improves after resting for several hours.
