  1. Prepare the coffee soaking liquid: Mix the hot water with instant coffee granules and 2 tablespoons of brandy. Set aside.
  2. Make the zabaglione: In the top of a double boiler, beat egg yolks and sugar until ivory colored. Add the remaining 1/4 cup brandy. Whisk over simmering water until the mixture starts to thicken, about 8-10 minutes. Stir constantly. Let cool slightly.
  3. In a large bowl, carefully mix the cooled zabaglione with the mascarpone cheese. The mixture will appear quite liquid initially; continue stirring until smooth.
  4. In a separate clean bowl, whip egg whites until very stiff peaks form. Gently fold the stiff egg whites into the zabaglione/mascarpone mixture in two additions to maintain airiness.
  5. Arrange half of the ladyfingers (split lengthwise) in the bottom of a 9x13 inch pan. Pour half of the coffee/brandy mixture gently over the ladyfingers to moisten them.
  6. Pour half of the zabaglione mixture over the soaked ladyfingers. Top with half of the whipped cream.
  7. Sprinkle with half of the cocoa powder and half of the grated chocolate.
  8. Place the remaining ladyfingers on top to create a second layer. Pour the remaining coffee mixture carefully over these ladyfingers.
  9. Repeat the layers: add the remaining zabaglione mixture, then the remaining whipped cream. Top with the rest of the cocoa powder and grated chocolate.
  10. Cover with plastic wrap and refrigerate until set, preferably overnight. Before serving, decorate with piped whipped cream around the edges and additional chocolate or cocoa powder if desired.

Note

Mascarpone Cheese Substitute: If mascarpone is unavailable or too expensive, blend 16 oz cream cheese (2 8-oz packages), 1/3 cup sour cream, and 2 oz (1/4 cup) whipping cream until smooth. Use this mixture in place of the mascarpone.

Substitution: You can substitute Marsala wine for the brandy if you prefer its flavor profile.

Serving Size: This dessert is quite rich. Consider cutting smaller portions for guests.

Storage: Keep covered in the refrigerator for up to 3 days.
