  1. Separate the egg yolks from the whites. In a large bowl, combine the mascarpone cheese, egg yolks, and sugar.
  2. Whip the mixture using an electric mixer until it becomes homogeneous, thick, and creamy.
  3. Brew the dark coffee and let it cool slightly. If using Marsala wine, mix it into the coffee.
  4. Quickly dip each Savoiardi cookie into the coffee mixture, ensuring they are moist but not soggy.
  5. Arrange a layer of coffee-soaked cookies in the bottom of a serving dish or individual glasses.
  6. Spoon a generous layer of the mascarpone cream over the cookies.
  7. Repeat the layers of cookies and cream until all ingredients are used, finishing with a layer of cream.
  8. Grate or crush the dark chocolate finely to create a dust.
  9. Sprinkle the chocolate dust evenly over the top of the tiramisu.

Note

If Mascarpone is unavailable, crème fraîche can be used as a substitute, though the texture will be slightly tangier. Do not use sour cream.
