Australian recipes: damper and pavlova
Description
Experience the heart of Australian cooking with this dual recipe featuring hearty Damper and delicate Pavlova. Damper is a simple, rustic flatbread traditionally baked in campfire coals, offering a dense, comforting texture perfect for spreading with golden syrup or jam. Pavlova, named after the ballerina Anna Pavlova, is a stunning meringue dessert with a crisp exterior and a soft, marshmallow-like interior. It serves as the perfect vehicle for whipped cream and fresh fruits like strawberries and kiwi. Together, these dishes offer a wonderful contrast of savory warmth and sweet, airy elegance, ideal for family gatherings or outdoor barbecues.Ingredients
Directions
-
Preheat oven to 350°F (175°C) for the Damper.
-
In a large bowl, mix together the self-rising flour, salt, sugar, and butter.
-
Add the milk (or powdered milk and water mixture) to the dry ingredients and mix well until a soft dough forms.
-
Knead the dough on a lightly floured surface for about 5 minutes until smooth.
-
Shape the dough into a flattened ball, approximately 7 or 8 inches in diameter.
-
Place the damper on a greased and floured baking sheet or in a greased round cake tin.
-
Bake for 30 minutes, or until golden brown and cooked through. If using a campfire, cook in a Dutch oven surrounded by coals.
-
While the damper bakes, preheat the oven to 250°F (120°C) for the Pavlova.
-
Using an electric mixer, beat the egg whites until soft peaks form.
-
Gradually add the caster sugar while continuing to beat the egg whites until stiff, glossy peaks form and the sugar is fully dissolved.
-
Gently fold in the cornflour, vinegar, and vanilla flavoring.
-
Line a baking tray with parchment paper and grease and dust it with a little cornflour.
-
Spoon the meringue mixture onto the tray, shaping it into a circle with slightly raised edges and a depression in the center.
-
Bake the Pavlova at 250°F (120°C) for one hour.
-
Turn off the oven and leave the door slightly ajar to allow the Pavlova to cool slowly inside the oven for at least one hour. This prevents cracking.
-
Serve the Damper warm in thick slices with golden syrup or jam.
-
Serve the Pavlova cold, topped with whipped cream and fresh fruit such as strawberries and kiwi.
Note
Damper is traditionally cooked in the coals of a campfire for an authentic smoky flavor.
Golden syrup is the traditional spread for Damper, but jam works well too.
For Pavlova, ensure the egg whites are at room temperature for maximum volume.
Do not open the oven door while the Pavlova is baking or cooling, as sudden temperature changes can cause it to collapse.
The Pavlova should have a crisp exterior and a soft, marshmallow-like interior.
Store leftover Pavlova in an airtight container at room temperature to maintain texture.
