Ingredients

Directions

  1. Pour the vegetable broth into a medium saucepan and bring it to a rolling boil over medium-high heat.
  2. Add the bulgur wheat, chopped onion, sliced mushrooms, green bean pieces, thyme, marjoram (or sage), salt, and pepper to the boiling broth.
  3. Once the mixture returns to a boil, reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer gently for 20 to 25 minutes, or until the bulgur is tender and the liquid is absorbed.
  4. Remove the saucepan from the heat and let it stand, covered, for 10 minutes to allow the grains to steam and fluff up.
  5. Uncover, fluff the pilaf with a fork, and serve warm.

Note

For added richness, sauté the onions and mushrooms in a little olive oil before adding them to the broth.

You can substitute the vegetable broth with chicken broth for a non-vegetarian version.

Leftovers store well in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of water to restore moisture.

Feel free to add other vegetables like diced carrots or peas for extra color and nutrition.
