Description

This Rice Pilaf with Currants and Cumin is a delightful side dish that balances earthy warmth with subtle sweetness. The toasted cumin seeds infuse the broth with a deep, aromatic flavor, while the long-grain rice cooks up fluffy and tender. Plump currants add bursts of chewy sweetness that contrast beautifully with the savory broth. Finished with fresh herbs, this pilaf is vibrant and light. It’s perfect for accompanying roasted chicken, lamb, or as a standalone vegetarian option. Ideal for weeknight dinners or festive gatherings, this dish brings a touch of global flair to your table without requiring complex techniques. Serve it warm to enjoy the full spectrum of flavors and textures.

Ingredients

Directions

  1. Place 1 tsp cumin seeds in medium saucepan and heat over low heat until aromatic about 1 min
  2. Add chicken stock, long-grain rice and dried currants and bring to boil
  3. Season rice mixture with salt
  4. Reduce heat to low; cover and cook until stock is absorbed and rice is tender, about 18 minutes
  5. Let rice stand 5 minutes
  6. Add fresh herbs, stir to combine and serve.

Note

For best results, toast the cumin seeds gently to avoid burning.

You can substitute chicken stock with vegetable broth for a vegetarian version.

Adjust salt to taste depending on the sodium content of your stock.
