  1. Preheat your oven to 350°F (175°C).
  2. Skin the chicken pieces and make 3-4 deep cuts on each piece to allow the marinade to penetrate deeply.
  3. In a large bowl, mix the plain yogurt, tandoori chicken powder, mustard oil, and salt to create a smooth, thick paste.
  4. Coat the chicken pieces thoroughly with the marinade, ensuring it gets into all the cuts. Cover and refrigerate for at least 6 hours, or overnight for best results.
  5. Arrange the marinated chicken pieces in a single layer on a flat aluminum tray. Cover the tray tightly with aluminum foil.
  6. Bake in the preheated oven for 20 minutes. Remove the tray, rearrange the chicken pieces, and drain any excess liquid that has accumulated.
  7. If the chicken looks dry, sprinkle a mixture of water and lime juice over it. Return to the oven and continue baking for another 40-50 minutes, checking occasionally and basting with lime juice if needed.
  8. Once cooked through, remove the foil. Increase oven temperature to broil/grill setting. Broil the chicken for 2-3 minutes to crisp the exterior and char the spices. Watch closely to prevent burning.
  9. Remove from oven. Brush off any excess loose paste if desired. Garnish with stir-fried onions and sliced bell peppers.
  10. Serve immediately while hot, with extra lime wedges on the side.

Note

For a smokier flavor, you can add a pinch of smoked paprika to the marinade.

Ensure the chicken is fully cooked before serving. Internal temperature should reach 165°F (74°C).

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven to maintain texture.

Feel free to adjust the spice level by adding more or less tandoori powder, or by including fresh chilies in the marinade.
