Stephanie da Silva’s Liver Collection
Description
This dish transforms humble liver into a luxurious main course through careful technique. The liver is quickly fried to maintain tenderness, while yellow onions are slowly sweated for over an hour until deeply caramelized and sweet. The magic happens in the pan sauce: deglazed with cognac or red wine, enriched with stock, and finished with fresh rosemary and butter for a glossy, savory finish. It’s a comforting, rustic meal that balances the rich, metallic notes of the liver with the sweetness of the onions and the aromatic punch of herbs. Perfect for a cozy weeknight dinner or an intimate weekend feast, served alongside garlicky mashed potatoes and grilled vegetables to soak up every drop of the delicious sauce.Ingredients
Directions
-
Fry the bacon in a large skillet over medium heat until crisp. Remove bacon and drain off all but enough grease to coat the pan.
-
Dredge the liver pieces in flour, shaking off excess. Fry quickly in the remaining bacon grease until browned on the outside but still tender inside. Remove liver to a plate.
-
In the same pan, add the sliced yellow onions. Cook slowly over low heat for 45–60 minutes, stirring occasionally, until deeply caramelized and sweet. Season with black pepper.
-
Return the liver to the pan, placing it on top of the onions. Pour off almost all the remaining grease, leaving just a tablespoon.
-
Add stock to the pan, scraping up the browned bits from the bottom. Bring to a boil.
-
Add the cognac or red wine and chopped rosemary. Simmer for 1 minute to meld flavors.
-
Swirl in the butter to bind the sauce. Taste and adjust seasoning with salt and pepper if needed.
-
Pour the sauce over the liver and onions. Serve immediately with garlicky mashed potatoes and baby grilled vegetables.
Note
For best results, choose fresh, high-quality liver. Chicken or calf liver works well.
If you prefer less fat, use olive oil instead of bacon grease, but you'll lose some of the smoky flavor.
The sauce can be made ahead and reheated gently before serving.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
