Place butter or margarine in a shallow glass dish and microwave on full power (100%) for 30 seconds until melted.

Add onion and garlic to the melted butter. Microwave on full power for 3 minutes until softened.

Mix curry powder, turmeric, and lemon juice together, then add to the onion mixture. Blend well.

Add the minced meat to the dish. Mix well with a fork to break up the meat.

Cover the dish and microwave on full power for 3-4 minutes, stirring once or twice with a fork to break up any lumps.

Drain the milk from the soaked bread and set it aside for the topping. Mash the soaked bread with a fork and add it to the meat mixture.

Add apricot jam (or chutney), raisins, grated apple, mashed banana, red wine (or stock), salt, and gravy browning. Mix everything well.

Cover the dish and microwave on medium-high power (70%) for 5 minutes, stirring once halfway through.

Lightly grease the glass dish if necessary. Transfer the meat mixture into the dish, smoothing the top and raising it slightly in the center so that the topping settles around the edges.

Note
Bobotie can be frozen at this stage, provided it has cooled down completely beforehand.
If you do not have a microwave, this recipe can be adapted for stovetop cooking of the meat mixture, followed by baking in the oven.
Ensure the milk used for the topping includes the milk drained from the soaked bread to maintain the correct consistency.
