Ingredients

Directions

  1. For the Egg Sponge: Heat butter and milk until butter melts. Beat egg whites until stiff, then add yolks and beat well. Gradually add sugar and beat well again. Fold in sifted flour and cream of tartar. Add baking soda to the milk mixture, then fold this into the egg mixture. Pour into a lined sponge tin and bake at 375°F (190°C) for 20 minutes.
  2. For the Date Rice Bubbles: Combine butter, sugar, vanilla, dates, and egg in a saucepan. Bring slowly to a boil, then keep boiling for 3 minutes. Remove from heat and let cool slightly. Stir in rice bubbles. Take small spoonfuls of the mixture and roll into balls, coating them in coconut. Place on a tray and refrigerate for at least 1 hour to set.
  3. For the Nut Loaf: Sift flour and baking powder, then add sugar and chopped walnuts. Make a well in the center and add beaten egg, milk, and warmed golden syrup. Mix to form a batter. Pour into a loaf tin and bake at 400°F (200°C) for 1 hour.
  4. For the Sultana Loaf: In a bowl, combine sultanas, sugar, golden syrup, and butter. Add 1 cup of boiling water and let cool. Mix baking powder with flour and mixed spice. Add the dry ingredients to the cooled sultana mixture and stir well. Pour into a loaf tin and bake at 350°F (180°C) for 1 hour.
  5. For the Ice Cream Cake Base: Cream butter and sugar, add egg and beat well. Add golden syrup, then mix in flour and baking powder. Spread into a swiss roll tin and bake at 350°F (180°C) for 20 minutes. Allow to cool completely.
  6. For the Ice Cream Cake Icing: Cream butter with icing sugar, add egg, flour, and vanilla. Spread this icing over the cooled cake base. Top with chocolate icing.
  7. For the Crunch: Combine rolled oats, coconut, brown sugar, vanilla, and melted butter in a bowl. Mix well and spread into a greased 20x30cm tin. Bake at 160°C (325°F) for 25 minutes, or until golden brown. Mark into pieces while hot, but leave in the tin until completely cool.

Note

Store the Date Rice Bubbles in an airtight container in the refrigerator to maintain freshness.

For the Egg Sponge, ensure the milk mixture is not too hot when adding it to the eggs to prevent curdling.

The Nut Loaf and Sultana Loaf can be wrapped in foil and frozen for later use. Thaw at room temperature before slicing.

Ensure all ingredients for the Crunch are mixed thoroughly to prevent uneven baking.
