  1. In a mixing bowl, combine the flour and salt. Cut in the shortening or lard until the mixture resembles coarse crumbs with pieces the size of small peas.
  2. Sprinkle 1 tablespoon of the cold water over part of the mixture and gently toss with a fork. Push the moistened dough to the sides of the bowl.
  3. Repeat the process with the remaining water until all the flour is moistened and the dough begins to hold together. Form the dough into a smooth ball.
  4. On a lightly floured surface, flatten the dough with your hands. Roll from the center to the edge, forming a circle about 12 inches in diameter.
  5. Wrap the pastry around your rolling pin and carefully unroll it onto a 9-inch pie plate. Ease the pastry into the plate, being careful not to stretch it.
  6. Trim the dough to extend about 1/2 inch beyond the edge of the pie plate. Fold the extra pastry under itself and press down to create a fluted edge.
  7. Prick the bottom and sides of the pastry thoroughly with a fork to prevent bubbling during baking.
  8. Bake in a preheated 450°F oven for 10 to 12 minutes, or until the crust is golden brown and crisp.

Note

For a crispier crust, you can line the unbaked shell with parchment paper and fill with pie weights or dried beans before baking, then remove them halfway through.

Ensure the water and shortening are very cold to prevent the fat from melting before baking, which ensures flakiness.
