Description

This Brandied Marinade is a game-changer for any roast or poultry dish. The combination of smooth brandy and dry white wine provides a luxurious base that penetrates the meat, while the soy sauce adds an essential umami depth. Unsulfured molasses brings a subtle sweetness and aids in creating a beautiful caramelized crust during cooking. Fresh ginger and Dijon mustard brighten the profile, cutting through the richness with a sharp, aromatic kick. It is perfect for marinating chicken breasts, pork chops, or even beef steaks before grilling or roasting. The alcohol helps break down fibers, ensuring tender results every time. Ideal for weekend dinners or special occasions where you want to elevate simple proteins with complex, restaurant-quality flavors. Simply whisk and pour over your choice of meat, letting it soak up the goodness for at least an hour for best results.

Ingredients

Directions

  1. In a medium bowl, whisk together the brandy, soy sauce, unsulfured molasses, Dijon mustard, grated fresh ginger, and dry white wine until the molasses is fully dissolved and the mixture is smooth.
  2. Pour the marinade over your chosen meat in a sealed plastic bag or a glass dish, ensuring all pieces are evenly coated.
  3. Refrigerate for at least 1 hour, or up to overnight for deeper flavor penetration. Turn the meat occasionally if possible.
  4. Remove meat from marinade before cooking, reserving any excess liquid for basting if desired (boil reserved marinade for 2 minutes before using).

Note

For best results, use fresh ginger rather than powdered for a brighter, more aromatic flavor.

This marinade works exceptionally well on chicken, pork, or beef. Adjust marinating time based on the thickness of the meat.

Do not reuse marinade that has been in contact with raw meat unless it is brought to a boil first.

If you prefer a less sweet profile, reduce the molasses to 1 tablespoon.
