  1. Preheat oven to 500°F (260°C).
  2. In a small bowl, combine 1 tablespoon olive oil and minced garlic. Rub this mixture generously over the cut sides of the halved tomatoes.
  3. Place tomatoes cut-side up on a baking sheet. Sprinkle with salt and freshly cracked pepper.
  4. Roast in the oven for 15-20 minutes, or until the tomatoes are deeply colored and caramelized. Remove and allow to cool slightly, then dice.
  5. While tomatoes roast, grill the habanero peppers over a medium-hot fire (or under a broiler) until slightly charred and blistered, about 2-3 minutes. Remove from heat and mince finely. (Wear gloves to protect your hands.)
  6. In a large bowl, combine the diced roasted tomatoes, minced habaneros, remaining 1/4 cup olive oil, lime juice, and cilantro. Mix well to combine.
  7. Taste and adjust seasoning with additional salt and pepper if needed.

Note

Storage: Cover and refrigerate. The salsa will keep for 5-6 days. The flavors will meld and intensify after sitting overnight.

Heat Warning: Habaneros are extremely hot. Wear gloves when handling and avoid touching your eyes. Ventilate your kitchen well while grilling/charring them.

Variation: For a milder version, remove the seeds and membranes from the habaneros before mincing, or reduce the quantity to 2-3 peppers.
