  1. Thoroughly rinse the mussels under cold water and scrub to remove any debris or sand. Discard any mussels that are already open and do not close when tapped. Drain well.
  2. In a large pot (approximately 5 liters or 1 gallon capacity), melt the butter over medium heat.
  3. Add the onion rings to the melted butter and sauté briefly until they begin to soften.
  4. Pour in the water, white wine, mussel spice mix, salt, and pepper. Bring the liquid to a boil.
  5. Add the drained mussels to the pot. Cover tightly with a lid.
  6. Steam the mussels for about 10-20 minutes, shaking the pot occasionally to ensure even cooking. The mussels are done when the shells have opened.
  7. Remove the pot from heat. Stir in the chopped fresh parsley.
  8. Serve immediately in deep bowls with the cooking broth, garnished with lemon slices. Provide crusty bread for dipping.

Note

Discard any mussels that remain closed after cooking, as they may not be fresh.

For a richer sauce, you can add a dollop of cold butter at the end and swirl to emulsify.

Leftover mussels can be stored in the broth in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stove.
