  1. Remove the stem and ends from the eggplant. Slice the eggplant on a diagonal into pieces approximately 1/4-inch thick.
  2. Place the salmon steaks and eggplant slices in a large, flat container.
  3. Cut the lemons and limes in half and squeeze the juice into a separate bowl.
  4. In the bowl with the citrus juice, stir in the olive oil, Greek or Italian seasoning, red pepper flakes, and fresh ground black pepper.
  5. Pour the marinade evenly over the salmon steaks and eggplant slices.
  6. Cover the container and refrigerate for 1 to 1.5 hours. Halfway through marinating, turn the steaks over and rearrange the eggplant slices to ensure even flavor absorption.
  7. Preheat your grill to medium-high heat.
  8. Place the salmon steaks on the hot grill. Cook on both sides until just done, being careful not to overcook the fish.
  9. When the fish is half-cooked, add the eggplant slices to the grill.
  10. Grill the eggplant slices on both sides until tender and marked with grill lines.
  11. Remove both the salmon and eggplant from the grill.
  12. Serve the fish and vegetables hot, preferably over a bed of rice.

Note

For best results, ensure the grill grates are well-oiled to prevent the eggplant from sticking.

If grilling outdoors is not possible, this dish can be cooked under a preheated broiler. Place the ingredients on a foil-lined baking sheet.
