  2. Grease a 17x11-inch jelly roll pan, line it with waxed paper, and grease and lightly flour the paper.
  3. Melt the unsalted butter in a small pan and let it cool slightly.
  4. In a medium bowl, whisk together the all-purpose flour, 1/3 cup unsweetened cocoa powder, and the baking powder.
  5. In another medium bowl, whisk the egg yolks with 1/4 cup granulated sugar and the melted butter until light and fluffy, about 1 minute.
  6. Whisk in the vanilla extract.
  7. Stir in about half of the dry ingredients into the egg yolk mixture until just combined.
  8. In a large, clean bowl, beat the egg whites with the salt until soft peaks form.
  9. Gradually beat in the remaining granulated sugar until stiff, glossy peaks form.
  10. Fold one-fourth of the egg whites into the yolk mixture to lighten it.
  11. Gently fold the yolk mixture into the remaining egg whites until combined.
  12. Sift the remaining dry ingredients over the batter and gently fold until no streaks remain.
  13. Quickly spread the batter evenly into the prepared pan.
  14. Bake for 10 to 12 minutes, or until the center springs back when lightly touched.
  15. Sift the remaining 2 tablespoons of cocoa powder onto a clean kitchen towel.
  16. Immediately invert the hot cake onto the cocoa-dusted towel and peel off the paper.
  17. Trim about 1/2 inch from each edge of the cake.
  18. Starting from a long side, roll the cake up in the towel jelly-roll fashion.
  19. Let the rolled cake cool completely to room temperature.
  20. While the cake cools, prepare the coffee cream filling.
  21. Scald the milk in a saucepan over low heat until tiny bubbles appear.
  22. Sprinkle the unflavored gelatin over the cold water in a small cup and let it soften.
  23. In a medium bowl, whisk together the remaining granulated sugar, 1/4 cup all-purpose flour, and 1/4 teaspoon salt.
  24. Gradually whisk the scalded milk into the sugar mixture.
  25. Return the mixture to a heavy saucepan and cook over moderately low heat, stirring constantly, until thickened and simmering.
  26. Whisk in 3 egg yolks (reserved from the 5 used in cake if you have extra, or use fresh) and cook until the mixture boils, stirring constantly.
  27. Remove from heat and stir in the instant coffee powder and the dissolved gelatin until smooth.
  28. Stir in the vanilla extract.
  29. Transfer the coffee cream to a shallow bowl, cover directly with plastic wrap, and cool to room temperature.
  30. Whip the heavy cream until stiff peaks form.
  31. Stir the cooled coffee cream to smooth it out.
  32. Fold one-fourth of the whipped cream into the coffee cream to lighten it.
  33. Gently fold the remaining whipped cream into the coffee mixture.
  34. Carefully unroll the chocolate cake onto a cutting board.
  35. Spread the coffee cream filling evenly over the cake, leaving a 1-inch border on one long side.
  36. Reroll the cake to enclose the filling.
  37. Place the roll seam-side down, cover, and chill for at least 4 hours or overnight until set.
  38. Trim the ends and slice into portions before serving.
