  1. Prepare the Raspberry Sauce: Thaw the frozen raspberries. In a small saucepan, heat the raspberries and currant jelly together until boiling.
  2. In a small bowl, combine the water and cornstarch. Stir this mixture into the boiling raspberry mixture.
  3. Continue to boil and stir for 1 minute until thickened. Remove from heat and allow the sauce to cool. Press through a sieve to remove seeds if desired.
  4. Prepare the Mousse: In a blender, blend the mashed avocados, sweetened condensed milk, and lemon juice until completely smooth.
  5. In a large bowl, whip 1 cup of the heavy cream until stiff peaks form.
  6. Fold the avocado mixture gently into the whipped cream until fully combined.
  7. Spoon the avocado mousse mixture into a 4-cup serving dish. Refrigerate for 3 to 5 hours until set.
  8. To serve: Whip the remaining 1 cup of heavy cream until stiff peaks form.
  9. Spoon 1/2 cup of the whipped cream onto each plate. Use the back of a spoon to spread it into a 5-inch circle.
  10. Drizzle a thin line of Raspberry Sauce in a circle 1 inch from the outside edge of the cream. Draw another thin line of sauce near the center.
  11. Using a knife, draw lines through the whipped cream and Raspberry Sauce from the center to the outside edge to create a decorative swirl.
  12. Spoon the chilled avocado mousse onto the side of the whipped cream. Serve immediately with additional Raspberry Sauce on the side.

Note

Storage: The avocado mousse can be made up to 5 hours in advance. Keep the raspberry sauce refrigerated separately until serving.

Substitutions: If currant jelly is unavailable, you can use apricot jam or grape jelly for the sauce. Fresh raspberries can be used instead of frozen, adjusting the jelly amount if the berries are very tart.

Tips: To prevent the avocado mousse from browning, ensure the lemon juice is well incorporated. For a richer flavor, use high-quality heavy cream.
