  1. Heat oil in a shallow vessel, preferably non-stick, over medium heat.
  2. Add the finely chopped shallots and sauté until they start turning golden brown and fragrant.
  3. Add the chopped onions, ginger, garlic, green chilies, salt, cumin seeds, turmeric powder, and coconut powder.
  4. Add the chopped red kale to the pan, mixing everything thoroughly to coat the leaves with the spice mixture.
  5. Cover the pan and cook on low heat, allowing the kale to wilt and soften using its own moisture.
  6. Once the leaves are tender but still retain some texture, turn the kale mixture well.
  7. In a separate small spoon, heat a teaspoon of oil and add mustard seeds until they pop, or dry-roast them until aromatic.
  8. Pour the popped mustard seeds over the kale, mix gently, and remove from the stove.

Note

For a richer flavor, you can use fresh grated coconut instead of coconut powder.

If you prefer less heat, reduce the number of green chilies or remove their seeds.

This dish is best served warm as a side dish with rice or rotis.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
