  1. Soak the red kidney beans overnight in cold water, then drain and rinse.
  2. In a large Dutch oven or heavy pot, combine the soaked beans, ham bone, onions, bell pepper, celery, garlic, bay leaf, salt, pepper, and sugar. Cover with water by about 2 inches.
  3. Bring to a boil, then reduce heat to low. Simmer covered for 1 to 2 hours, or until the beans are fork-tender. Skim off any foam that rises to the top.
  4. While the beans are cooking, brown the spicy sausage links in a separate skillet. Slice into rounds once cooked.
  5. Once the beans are tender, remove the ham bone and bay leaf. Discard the bone and bay leaf. If desired, shred any meat from the ham bone and return it to the pot.
  6. Add the fried sausage to the bean mixture. Stir gently to combine.
  7. Just before serving, stir in the chopped parsley. Adjust seasoning with more salt, pepper, or Tony's Creole seasoning if needed.
  8. Serve hot over a bed of cooked white rice.

Note

This dish freezes exceptionally well. Allow to cool completely before transferring to freezer-safe containers. Reheat gently on the stovetop, adding a splash of water or broth if needed to adjust consistency.

For a vegetarian variation, omit the ham bone and sausage. Use vegetable broth instead of water and add smoked paprika or liquid smoke for depth of flavor.

Tony's Creole Seasoning is highly recommended for authentic flavor, but you can substitute with a mix of cayenne, garlic powder, onion powder, and black pepper.

Serve with cornbread and mustard greens for a traditional Southern meal experience.
