  1. Prepare the zucchini by cutting off the tops and scooping out the insides with a corer or peeler, being careful not to break the skin. Save the scooped-out flesh if desired, or discard.
  2. In a bowl, combine the washed and soaked rice, tomato paste, cooked lentils, grated onion, crushed garlic, cinnamon, cumin, and minced fresh cilantro. Add salt and pepper to taste. Mix thoroughly to create the filling.
  3. Fill each zucchini boat about 3/4 full with the rice mixture. Place the cut-off tops back on the zucchini, tapering them with a knife if necessary to fit snugly.
  4. Line the bottom of a large pot with lettuce leaves to prevent burning. Arrange the stuffed zucchini upright in the pot. If they are loose, wedge potatoes or other vegetables around them to keep them in place.
  5. Cover the zucchini with water or broth. Ensure the liquid is very well salted. Add the remaining tomato paste, a chopped onion, additional garlic, and more cumin to the pot. Cover with a lid.
  6. Bring the liquid to a boil over medium-high heat, then reduce heat to medium-low to simmer. Cook for 45 minutes to 1 hour.
  7. Check the rice inside a zucchini for doneness. If the rice is tender, the dish is ready. Carefully remove the zucchini to a serving platter.
  8. Discard the lettuce leaves and any remaining solid aromatics from the broth. Spoon a little of the hot broth over the zucchini. Garnish with a sprinkle of paprika and serve with an optional onion-mint yogurt sauce.

Note

Be careful when coring the zucchini to avoid breaking the skin, which can cause the filling to leak out during cooking.

You can double the filling and use more zucchini if desired. This recipe is flexible based on the size of your vegetables.

The lettuce leaves at the bottom of the pot are discarded before serving.

Optional: Serve with a cool onion-mint yogurt sauce for added freshness.
