Fettucine with zucchini and mushrooms

Difficulty: Intermediate

Description

This elegant yet simple pasta dish transforms humble summer vegetables into a luxurious meal. The key lies in the velvety sauce, created by simmering half-and-half with sautéed zucchini and mushrooms until everything is tender and fragrant. The sharp bite of Parmesan cheese cuts through the richness, while fresh parsley adds a bright, herbaceous finish. It’s a perfect weeknight dinner that feels special enough for guests, offering a comforting blend of creamy textures and savory flavors. Best enjoyed immediately while the fettuccine is hot and the sauce is thick and glossy.

Ingredients

Directions

  1. Bring a large pot of salted water to a boil. Cook fettuccine according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
  2. While pasta cooks, cut zucchini into thin julienne strips. Slice mushrooms if not already sliced.
  3. In a large skillet or wok, melt butter over medium-high heat. Add mushrooms and zucchini strips. Sauté for 2-3 minutes until vegetables begin to soften but still retain some crunch.
  4. Pour in the half-and-half. Reduce heat to low and simmer gently for 3 minutes, stirring occasionally, allowing the sauce to thicken slightly.
  5. Add the drained fettuccine to the skillet. Sprinkle with Parmesan cheese and chopped parsley. Toss vigorously to combine, adding a splash of reserved pasta water if needed to help the sauce coat the noodles evenly.
  6. Serve immediately while hot and creamy.

Note

For a richer flavor, consider adding a pinch of nutmeg to the half-and-half while simmering.

If you prefer a lighter dish, you can substitute the half-and-half with heavy cream for a thicker sauce or whole milk for a lighter consistency.

This dish is best eaten fresh, as the pasta will continue to absorb the sauce and become soggy if stored for too long. If reheating, add a splash of milk or cream to restore creaminess.
