Carnivore Slow-Cooked Beef Short Ribs

Description

Beef short ribs are browned in tallow and slowly cooked with bone broth until exceptionally tender. The natural fat and collagen create a rich cooking liquor without flour, vegetables or other conventional braising ingredients.

  1. Preheat the oven to 150°C.
  2. Pat the beef short ribs dry and season them evenly with salt.
  3. Heat the beef tallow in a heavy ovenproof casserole over high heat.
  4. Add the short ribs in batches if necessary and brown thoroughly on every side.
  5. Return all the ribs to the casserole and pour in the beef bone broth.
  6. Bring the liquid to a gentle simmer.
  7. Cover the casserole tightly and transfer it to the oven.
  8. Cook for 3 1/2 to 4 hours until the meat is very tender and pulls easily away from the bone.
  9. Remove the casserole from the oven and allow the ribs to rest in their cooking juices for 10 minutes.
  10. Serve the ribs with some of the concentrated cooking juices spooned over the meat.

Note

Choose well-marbled short ribs because the fat and connective tissue are important to the final texture of the dish.

Use a bone broth without vegetables, sugar or plant-based flavourings when following a strict carnivore diet.

The cooking juices can be reduced after removing the ribs if a stronger, thicker meat sauce is preferred.
