Ingredients

Directions

  1. Preheat oven to 350ðF (175ðC).
  2. In a food processor, pulse chocolate wafer cookies until fine crumbs form.
  3. Add 2 tablespoons melted salted butter to the crumbs and blend until the mixture resembles wet sand.
  4. Press the crust mixture firmly into the bottom of a 9-inch springform pan.
  5. Place the pan in the refrigerator to chill while preparing the filling.
  6. In a large bowl, beat 3 packages (24 oz) softened cream cheese with an electric mixer until smooth and creamy.
  7. Add 1/2 cup white sugar and 1/2 cup light brown sugar, mixing until fully incorporated.
  8. Beat in 1/2 cup sour cream and 1/2 cup ricotta cheese until the mixture is uniform.
  9. Add 3 eggs one at a time, beating just until blended after each addition.
  10. Stir in 1 1/2 cups melted semisweet chocolate chips, 1/2 cup strong brewed espresso, 1 teaspoon vanilla extract, and 1 teaspoon almond extract.
  11. Mix until the batter is very smooth and glossy.
  12. Pour the filling over the prepared crust in the springform pan.
  13. Bake for approximately 1 hour, or until the edges are set but the center still has a slight jiggle.
  14. Turn off the oven and crack the door open about 1 inch using a wooden spoon.
  15. Let the cheesecake cool in the oven for 1 hour to prevent cracking.
  16. Remove from the oven and cool completely to room temperature.
  17. For the glaze, combine 6 oz semisweet chocolate chips and 1/4 cup unsalted butter in a small saucepan.
  18. Melt over low heat, stirring constantly until smooth.
  19. Stir in 1/4 cup chopped pecans until coated.
  20. Pour the warm glaze over the top of the cooled cheesecake, spreading it to the edges.
  21. Allow the glaze to set slightly, letting some drip down the sides if desired.
  22. Refrigerate for at least 4 hours or overnight until firm.
  23. Slice into wedges and serve chilled.
